Cooking Through the States: Rhode Island

 We did our Rhode Island dinner at the very end of the month. Rhode Island didn't have a ton of options, so I was worried that this one would be a flop. It ended up being really good. Mark and I made calm cakes, and Jonny cakes. Noah and Joanne did a yummy salad, and Amanda did the dessert.

The clam cakes turned out really good. We tried them different ways, plain, with malt vinegar, and with tartar sauce. Everyone really liked them!

The Jonny cakes were a huge hit! They are basically a corn meal pancake. We ended up serving them with butter and syrup like a traditional pancake, and we also put the huckleberry honey on them that Larry gave us for Christmas. That ended up being the favorite. So good!

Rhode Island is known for their frozen lemonade, so Amanda made a frozen lemonade pie. It was so yummy! 

So all in all, Rhode Island ended up being quite tasty. I've gotten out of my comfort zone twice now with clams, and I'm no longer afraid of them. 😁 Pennsylvania is next, and I'm really excited about that one!
